Oh, what childhood memories I have now, when I write this recipe! In Transylvania, cheese macaroni is a must when you want to prepare something quick and very tasty. In their salty or sweet version (with raisins, absolutely musty!) They are a main course or an omniiubert dessert. Without plugs and other figures, it is a delicious meal that would not be rejected by the grumpers. If I were of American origin, I would use the term "comfort food" to describe this dish, but as I am pure Romanian, I say simply: tulai, God, goodbye! We, the Transylvanians, even have an end of the salted pudding that obviously contains some bacon, because otherwise, would we still be Transylvanians ?! Do you know what that is? The top of the peaks? We also put a sugar cure on top that nah, if it's a calorie bomb, a bomb to be & # 8230. The deadly combination of carbohydrates (macaroni), protein (cheese and eggs) and fat (cream and cheese) is not enough, we still need help and with sugar. God, what a treat it was on my head and belly when I was a kid! Today, I can no longer put sugar over the salty version of this dish, but the memories remain pleasant. It is said that tastes change at the age of 7, I can only confirm this.

I present you a version of your own today, I don't remember how my mother used to make them (now she doesn't, because we eat fillets, salads and other diet stuff), but the taste is almost entirely similar & # 8230.

✽ Depending on the taste, you can combine macaroni with Telemea cheese, if you prefer salty-sweet macaroni pudding, or with cottage cheese, if you prefer a more neutral taste.

Baked cheese macaroni. The tastiest pudding recipe

Ingredient list:

  • 500 grams of short pasta (macaroni, cornetti or penne, preferably)
  • 60 grams of butter with 82% fat
  • 2 tablespoons olive oil
  • 50 grams of flour
  • 500 ml. fat milk
  • salt and white pepper
  • 300 grams of cheese that melts easily, of a single type or in a mixture, according to taste

Method of preparation:

How to cook pasta? Start the oven and set it at 180 ° C. We prepare a heat-resistant form, with a volume of 1.75-2 liters. Grease it well with 10 grams of butter. Put on the fire a pot with 4-5 liters of water. When the water starts to boil, sprinkle 1 tablespoon with a pinch of salt.

Baked cheese macaroni. Bring to the boil again and dissolve the salt. Then add the pasta. Stir once to make sure none stick to the bottom. Boil the pasta for 2 minutes less than written in the recommendation on the package. That's because they will continue to boil in the oven.

Drain well, put in a bowl and sprinkle with a tablespoon of olive oil. Stir a little and set aside. How to prepare the sauce? Put the cheeses on the large grater. The right types of cheese are: cheddar, mozzarella, gruyere, gouda or classic Romanian cheese. Basically, it's a kind of bechamel sauce.

Baked cheese macaroni. Put in a pan, over medium heat, a tablespoon of olive oil, along with butter. When the butter has completely melted, add the flour and mix well. Cook for one minute, then gradually pour the milk at room temperature, stirring constantly with the whisk. The sauce should NOT have lumps.

Then boil the sauce for 2-3 minutes, until it thickens well. At the end, it can be seasoned with salt or white pepper, or a drop of nutmeg, according to taste. Two thirds of the grated cheese is poured into the hot bechamel sauce and mixed until the cheese is completely melted. Then immediately pour over the cooked macaroni and mix well.

How to serve:

Baked cheese macaroni. Put everything in the prepared form, as I mentioned in the recipe. Level the macaroni well and sprinkle the rest of the grated cheese on top. Shape in the oven, which must be preheated to 180 ° C. We place them at an average height for 15 minutes. Then, the temperature can rise to 230 ° C, on the grill function, for 3-4 minutes.
