Cocktail of the Month: Candy Corn Martini

Halloween and the arrival of fall signify an array of delightful holiday pleasures. Whether you fill a bag of trick-or-treat goodies or carve a pumpkin, it’s the spooky season of amusement.

At one time, Halloween was mostly a child’s holiday, but those days are long gone. According to Fortune magazine, more money — $1.4 billion — will be spent on adult costumes than on children’s costumes (just $1.1 billion). Considering this trend, it’s not surprising that now there are now grown-up versions of your childhood delights.

Being a chocoholic, my favorite girlhood Halloween memories involved foraging through my bag of goodies and discarding or trading all of my non-chocolate loot. Nowadays, my tastes have evolved from Mr. Goodbar and 3 Musketeers to Belgium’s finest. A sophisticated way to satisfy your cravings is a trip to Co Co. Sala chocolate lounge on F Street NW, where the cocktail list boasts a variety of chocolate-infused tipples, including a chocolate malted milk martini, the Libido, which comes with chocolate ice cubes, and the Apollo, prepared with 72-percent dark chocolate.

Perhaps the candy most synonymous with Halloween is a bag of cone-shaped cloyingly sweet candy corn. Better Homes and Gardens magazine reports that George Renninger, a candymaker at the Wunderle Candy Company in Philadelphia, invented the revolutionary tricolor candy in the 1880s. When candy corn was first produced, it was called “Chicken Feed.” The boxes were illustrated with a colorful rooster logo and a tag line that read “Something worth crowing for.” According to the National Confectioners Association, more than 35 million pounds (or nine billion pieces) of candy corn will be produced this year.

An adult version of this time-honored sweet can be found at Cuba Libre, on 9th Street NW. The restaurant’s Candy Corn Martini is formulated from a combination of vanilla vodka, butterscotch schnapps, crème de cacao and fresh orange juice, which are layered and served in a triangular-shaped martini glass so it resembles the familiar sweet. Guillermo Pernot, Cuba Libre’s chef-partner, says, “The idea for Cuba Libre Restaurant and Rum Bar’s festive candy corn martini was inspired by everyone’s favorite Halloween candy, the classic candy corn, but then converting it into a fun seasonal drink … for adults.” As they say in Willy Wonka (quoting Ogden Nash): “Candy is dandy, but liquor is quicker!”

Another universal symbol of Halloween and fall is pumpkins. Making jack-o’-lanterns is a long standing ritual and pumpkins are also used to make soups, desserts, breads and pies. One of the most anticipated G-rated seasonal inventions is the artificially flavored pumpkin latte from a ubiquitous coffee chain.

A far superior choice to quell your longings is the pumpkin spice margarita from El Centro D.F., in Georgetown and on 14th Street NW. The drink is forged from tequila that has been infused with roasted pumpkin and spices such as nutmeg, allspice, sugar and cinnamon. While these seasonal essences may seem an odd match for tequila, remember that the folks at El Centro are experts at marrying tequila with flavors. Their extensive list of tequila infusions includes grilled pineapple, serrano, lemon tea and strawberry basil.

Another option, which combines pumpkin with another fall staple, apple, is the Oval Room’s Grim Fandango cocktail, named for the video game and made from a combination of Gala apple cider, pumpkin puree, ginger root, honey, brown sugar, cloves, cinnamon stick and rum.
Finally, to cure your holiday overindulgence ills, head to Macon Bistro and Larder on upper Connecticut Avenue for their Isle of the Dead cocktail, inspired by the classic Corpse Reviver No. 2. The Corpse Reviver family of definitive cocktails were intended as “hair of the dog” hangover cures. Popular during the late 19th and early 20th century, they began to die out after Prohibition. The Corpse Reviver No. 1 and No. 2 were first listed in the “Savoy Cocktail Book” by Harry Craddock in 1930.

The Isle of the Dead is made from a combination of Damoiseau VSOP Rhum, Dubonnet, orange juice, Cointreau and Laphroaig Scotch. The combination of both rum and Scotch should pack a powerful punch — enough to scare the ghosts and goblins away until next year.

My husband is a huge fan of candy corn. As soon as you see them in the stores they will certainly be in my pantry. Well this year we happened to be at Target and Chad spotted the candy corn Oreo's. He surprised me with them. You see he loves candy corn and I love Oreo's. It is like a match made in a sugar heaven.

Of course I could have just devoured the whole bag of Oreo's, which to be honest did originally sound like the best option. But I decided to create a fabulous dessert that would combine these fun Oreo's and candy corn.

I started off this fab treat with a candy corn Oreo crust. Literally packed with Oreo's candy corn cookies and actual candy corn cookies. Then I prepared a white chocolate fudge and stirred in chopped Oreo's and candy corn. The combination is phenomenal. It is absolutely the dessert that I dreamed of.

It is so rich and delicious a little square will do. for now. I am wrapping these fab fudge up and gifting it before I eat the whole pan. It is a great party dessert or a just because dessert.

Candy Corn Oreo Cookies and Cream Fudge Bars
serves 36

20 minutes active time
2-4 hours inactive time

3 cups granulated sugar
2 sticks (1 cup) unsalted butter, divided (plus more for baking dish)
1 cup (8 fl oz) evaporated milk
1 (12 oz.) package white chocolate chips
1 (7 oz.) jar marshmallow cream
1 package Oreos Candy Corn Cookies, divided
1 ½ cups candy corns, divided

Line a buttered 8”x8” baking pan with parchment paper, butter parchment paper and set aside.

Melt ¼ cup (4 Tbsp) butter. Set aside.

Combine 2/3 of the Oreo cookies (about 20 cookies) and ½ cup candy corns in a food processor. Pulse until mixture is crumbly. Continue pulsing and drizzle butter into pour spout. Pulse until mixture comes together.

Pour mixture into baking pan and evenly press mixture down into pan to form a crust. Set aside. Rough chop remaining cookies and candy corns. Set aside.

In a large saucepan over medium-high heat combine sugar, 1½ cups butter and milk. Bring to a boil, stirring constantly. Once mixture comes to a boil, cook for 3 minutes. Continue to stir constantly.

Remove from heat, stir in chocolate chips and marshmallow. Stir until mixture is smooth. Stir in Oreo’s and ½ of remaining candy corns. Pour fudge into Oreo crust. Sprinkle with remaining candy corns and gently press them into the fudge.

Cover and chill until fudge is firm, approximately 2-4 hours. Remove fudge from pan (using edges of parchment paper). Place on a cutting board and cut into squares. Serve and enjoy!

COOK’S NOTE: If you are unable to find the seasonal Oreo’s Candy Corn Sandwich Cookies, you can substitute with Golden Oreo’s. If you wish to still achieve the orange crust add 6-10 drops of orange food coloring until desired color is achieved.

Orange Creamsicle Float: Make it a cocktail or a kid-friendly treat!

I have been intending to make this cocktail for a while, so I’m happy to finally bring you the Spiked Creamsicle Float. Of course, it is just as easy to make this sans vodka for kids or anyone who wants an un-spiked version. Just don’t mix up the glasses because you can hardly taste the difference! I love creamsicles, which is actually surprising because I’m not usually a big fan of citrus desserts. I also tend to think vanilla is a bit boring, but maybe combining two meh (in my book) dessert flavors adds up to yum. Whatever the reason, I love tart orange flavor sneaking into my creamy vanilla ice cream. The tastes come together perfectly in this dessert cocktail!


Your official Halloween night handing-out-candy drinking game

Halloween is one of my favorite holidays, and handing out candy and looking at cute and spooky costumes are highlights of my year.

But whether it’s a bratty Spider-Man who’s hell-bent on the trick part of trick-or-treating and makes you resolved to get a tubal ligation, or a delightfully terrifying zombie costume that leaves your heart pounding, sometimes the night just calls for some adult libations.

That’s where this drinking game comes in handy, complete with cocktail suggestions and a friendly reminder to always proceed with caution when pairing booze with a game designed to get you sloshed. Feel free to change this from a drinking game into a “reaching into the candy bowl” game if you’re not into the hard stuff &mdash sometimes a sugary treat is a harried adult’s best friend.

1. Kids complain about your candy selection

Does this look like Willy Wonka’s flipping chocolate factory? No? Then be grateful, kid, because this candy was bought with my hard-earned “allowance,” not yours.

Suggested drink: Dirty Shirley Temple. Rub adulthood in their faces.

2. You encounter obnoxious parents

“Is this candy gluten-free?” “You need brighter lighting on this walkway.” “You gave little Ariana more candy than to Reginald Jr.!”

Listen, parents. I’m here to see a few costumes, help some kids on their way to future dental work and generally make merry. I am not here to get a lecture on why I “really should consider some sugar-free candy next year.” Don’t like it? Get off my porch! Some kids’ parents… am I right?

Suggested drink: Four Loko. Dare them to judge you.

3. Teens who aren’t in costume come to your door

We get it &mdash you’re “too cool” to dress up on Halloween. Not too cool to go around the neighborhood, asking your babysitting charges’ parents for free food, though? Hmm.

Suggested drink: A Negroni. It’s a sophisticated, “acquired taste,” hipster drink that will leave disaffected teens shaking in their boots. When they realize there’s a whole world out there beyond Boone’s Farm Blue Hawaiian, they might not be so eager to grow up.

4. Adult trick-or-treaters beg you for candy

Some people really do this! I get that dressing up in costume is fun, but can’t you save it for a party or something? If you’re old enough to vote, you’re old enough to buy your own damn Halloween candy.

Suggested drink: Single malt Scotch whisky. You are mature AF, and these adult trick-or-treaters will know it.

5. The doorbell rings when you’re in the bathroom

Sure, it’s not going to fix anything, but when your dinner of Halloween candy is (literally) backfiring, you hear the doorbell ring, and you realize you’re about to disappoint some kids by not opening the door, you may as well lean into the whole “being a disappointment to children” thing and take a drink.

Suggested drink: Wine juice box. Portable, spill-proof and more resistant to bathroom germs than an open container is.

6. You see an offensive (or lazy) current events costume

Parents of the world, don’t use your children as puppets for your political beliefs. Are there really any 7-year-olds out there who want to dress in a costume mocking Ryan Lochte? No.

Suggested drink: Candy corn martini. Proof that you captured the spirit of the holiday better than they did.

7. You see a racist costume

Take note: If you are worried for even a second that your or your child’s costume might be appropriative or racist, just don’t do it.

Suggested drink: Vodka, straight up.

8. You see a legitimately scary costume

I am in awe of people who have actually tried those liquid-latex zombie face rot makeup tutorials and pulled it off. Gory goddesses and gods of Halloween, I bow to you.

Suggested drink: Celebratory Champagne. This is what Halloween is all about.

9. An adorable baby in a cute costume comes to your door

I may be the embodiment of cliché, but when I see an infant in a cute costume, preferably a furry animal of some kind, my knees get weak, and I turn into a cooing, baby-talking wreck of a human being.

Suggested drink: Strong cup of tea with a shot of brandy. Snap out of it, already!

10. You’ve said goodbye to the last trick-or-treater of the night

Whether you’ve decided to turn off the porch light or you’ve been waiting with bated breath but haven’t heard the doorbell ring in an hour, Halloween has to come to an end eventually.

Congratulations, you did it! You survived another night of exhausting, exhilarating tricks and treats, and you deserve a rest.

Suggested drink: Gatorade and two ibuprofen. You’re an adult, remember? And the truly scary thing about Halloween after the age of 21 is that you probably have to go to work hungover the next day.


How to Make Peanut Brittle

Before you start making peanut brittle, measure out the butter, baking soda, and vanilla and set them aside. Timing is crucial when adding these ingredients, so you will not have time to measure and add when the time comes. To begin, get the sugar inversion going. Add the sugar, corn syrup, and water in a medium, heavy-bottom saucepan. Bring the mixture to a boil over medium heat.

Stir the mixture until the sugar is dissolved, and if you haven’t already, insert a candy thermometer into the mixture. Once the temperature has reached 280°F, add the salted peanuts. Continue cooking, stirring frequently, until the mixture reaches 300°F.

As soon as the temperature is at 300°F, remove the pot from heat and quickly add the butter, baking soda, and vanilla. The mixture will start to foam, but that shows you the reaction is happening (it’s a good thing). Immediately pour the mixture onto a baking sheet. I recommend pouring in a circular pattern to evenly distribute the peanuts.

Use a couple of forks to spread and thin out the peanut brittle. Let it sit until cool. Finally, use your hands, the back of a wooden spoon or even a couple of gentle taps with a cooking mallet to break apart the pieces. Enjoy! Store peanut brittle in an airtight container at room temperature for up to 6 weeks.
