Wash the spinach well, dry them well and cut them into pieces of about 6 cm. Cut the bamboo shoots into strips.
Soak the mushrooms in hot water for about half an hour, remove the stems and use only the caps which, if too large, must be cut in half.
Heat 2 tablespoons of oil in the wok, sauté the spinach by adding half a glass of water for a few minutes until the water has evaporated completely. Add the mushrooms and the bamboo sprouts and sauté them, stirring for about a minute, then add the sherry and soy sauce. Continue to cook for another minute, pouring in some broth if needed.
Mix the cornstarch with a little cold water, and pour this mixture into the pan, stirring well so that the sauce thickens and mixes evenly.
Serve immediately.


  1. Stir-fry two tablespoons of drained bamboo shoots along with the typical Chinese mushrooms and with carrot slices, seed oil and soy sauce.

Preparation
Soak the mushrooms in warm water for 30 minutes, drain, squeeze them, remove the stems and cut them into strips. Drain the bamboo shoots well and wash them in cold water.
