Marshmallow Crisp

Ingredients

  • 1 bag marshmallows
  • 2 Tablespoons butter, plus extra for greasing
  • 1 Cup dried fruit
  • 1/2 Cup sliced almonds
  • 1/4 Cup chocolate chips
  • 4 Cups Rice Krispies cereal
  • 1/4 Cup shredded coconut

Directions

In a sauce pan over medium-heat, melt the butter and the marshmallows together. Remove from the heat and add the fruit, nuts, chocolate chips, and cereal and mix well. Using the extra butter, coat a 9-by-9 inch pan. Place the marshmallow mixture into the pan and smooth it out so that it reaches all of the edges. Sprinkle the coconut on top and press down to compress. Let cool and serve.

Marshmallow Creme Rice Crispy Treats

How to make marshmallow creme rice crispy treats seems like an easy switch up of marshmallows for the creme. However, not so fast. While this will work, I have perfected the best rice crispy treats recipe which is actually the combination of marshmallow creme along with miniature marshmallows, butter and an entire box of cereal. People, these marshmallow creme rice crispy treats will change your world.

At my house, desserts are a rarity. I am not a baker. It isn't that I can't bake, but measuring precisely is just hard. So hard. Which is why I have become the master of making the best damn Rice Krispies treats. Whether it is my scotcheroos aka peanut butter Rice Krispies treats. This rice Krispies treats recipe is my favorite. And if my family is lucky I will share it with my family. Seriously. These are amazing.


  • Medium Saucepan (THIS one is great)
  • Big Mixing Bowl (You’ll want a big one like THIS)
  • Lined Cookie Sheet

In a medium saucepan place the caramels, sweetened condensed milk, and butter. Over medium heat stir constantly until smooth and creamy.

Using a toothpick or skewer, dip each marshmallow into the caramel mixture. Tap off the excess.

Pour the Rice Krispies in a big bowl and then gently roll the caramel covered marshmallow in the Rice Krispies.

Place the caramel marshmallow rice krispie balls on a cookie sheet that has been lined with parchment paper and gently pull out the toothpick or skewer from the marshmallow.

Let the Caramel Marshmallow Rice Krispie Balls set up for about 30 minutes.


A Homemade Marshmallow Fluff Krispie Treat Recipe

Anyhow, these Krispies I made today might be better than my Perfect for some people…but possibly not all.

Here’s the deal. I wanted to push Krispie Treats to MAXIMUM MARSHMALLOW capacity.

How many marshmallows can I stuff in a Krispie Treat and have them still hold their shape when cut. It’s really a tough job I have over here people.

When I was doing my Marshmallow Conversion experiment I got this idea…what about a Krispie Treat made from Fluff. Now I am sure this has been done, even though I didn’t consult Dr. Google…

But I didn’t want a Krispie with just fluff. I wanted the softness of the fluff, but still the have it hold together like a Krispie Treat should.

AND these krispie treats stay soft for days…it’s a miracle!

Y’all I nailed the socks off this mess. NAILED.


Making the Marshmallow Popcorn

Step 8 & 9: Slowly pour about a third of the marshmallow mixture over the salted popcorn.
Step 10: Gently fold the marshmallow mixture in with the popcorn. Continue to add the marshmallow mixture a bit at a time, stirring between each addition.
Step 11: The popcorn should be completely covered in the warm marshmallow mixture.

Step 12: Now pour the popcorn onto a cookie sheet covered with parchment paper, foil, or a Silpat liner.
Step 13: Use the spatula to even the popcorn out on the cookie sheet.

Step 16: Allow the Marshmallow Popcorn to cool. Break apart into pieces and serve.


How to Color Rice Krispie Treats

One of the many great things about Rice Krispie Treats is that they don’t have to be beige! You can use this recipe as the base for many fun and creative and colorful Rice Krispie Treat desserts.

It is so easy to do … the trick is when to add the food coloring which is AFTER the marshmallows are melted and BEFORE you add the Rice Krispie Treats.

Recipe Summary

  • 6 tablespoons unsalted butter, plus more for pan
  • 1 bag (10 1/2 ounces) mini marshmallows
  • 1/4 cup unsweetened Dutch-process cocoa (spooned and leveled)
  • 6 cups crisp rice cereal
  • 2 ounces bittersweet chocolate, melted

Butter an 8-inch square baking pan. Line bottom and two sides with parchment paper, leaving a 2-inch overhang on both sides. Butter paper set pan aside.

In a large saucepan, combine butter, marshmallows, and cocoa. Cook over medium, stirring frequently, until melted, about 6 minutes stir in rice cereal. Press rice mixture into prepared pan drizzle with melted chocolate. Let cool to room temperature cut into 16 bars. (To store, keep in an airtight container at room temperature, up to 5 days.)


Stir in the Fluff

In a typical Rice Krispies Treats recipe, you can substitute an entire 7.5-ounce jar of Marshmallow Fluff for a 10-ounce package of regular marshmallows — approximately 40 marshmallows — or 4 cups of miniature marshmallows.

To make the sticky mixture that holds the Rice Krispies cereal together in the treats, you'll need to heat the Marshmallow Fluff with the melted butter or margarine on the stove top or in the microwave. Stir the mixture and check it frequently to make sure that it doesn't burn.


Marshmallow Crispy Squares

You'd think this was designed to keep the children happy, and while that's OK with me, it is the adults who seem to find this particuarly irresistible.

If I can find a tub of edible disco glitter in one of my cupboards, I sprinkle some on while the marshmallow is still sticky, but it has a certain pearly, luminescent appeal as it is.

It's also beautiful cut into squares, then each piece pierced with a white birthday cake candle, and arranged on a stand. Alternatively, you could turn this into more of a pickable pud, by cutting the slab into teeny-tiny squares so that people can pop one straight into their mouth.

For US cup measures, use the toggle at the top of the ingredients list.

  • 3 7 ounce jars marshmallow creme
  • 2 teaspoons vanilla
  • 15 cups crisp rice cereal

Line a 13x9-inch baking pan with foil, extending foil over edges. Lightly butter foil.

In a very large Dutch oven melt the butter over low heat. Add the tiny marshmallows cook and stir until melted. Stir in the marshmallow creme and the vanilla. Remove from heat. Gently stir in the cereal. Transfer to prepared pan use buttered waxed paper or rubber spatula to press firmly.

Weight cereal mixture in pan down so they press together* let stand at least 1 hour. Using foil liner, lift treats out of pan. Using a buttered knife, cut into bars.

To weight the cereal mixture down, cover the surface with a sheet of waxed paper and a sheet of foil. Place another 13x9-inch baking pan on top of the foil add a few unopened cans of food to the top pan for weight.
