I like the simple couscous, cooked only with vegetables but also in this version with tomato sauce.

  • a cup of tomato juice
  • 3-4 cloves of garlic
  • 2 teaspoons soy sauce
  • 2 tablespoons Thai sauce (not necessarily but I really like this combination)
  • salt and pepper to taste

RECIPE PREPARATION Cous cous with tomato sauce served with chicken breast:

First put the couscous to boil in water with a little salt.

During this time we put a pan on the fire and we drop in it a little olive oil in which we then heat the finely chopped onion and pepper.

Pour the tomato sauce over the hardened vegetables and let it boil for a few minutes (4-5), then add the sliced ​​garlic and the finely chopped basil. Add salt and pepper to taste and simmer for another 6-8 minutes.

Strain the boiled couscous and add it over the tomato sauce, then add the Thai sauce and the soy sauce.

We prepare the grilled spiced chicken breast and serve with the couscous garnish.

My boy is a big fan of couscous, in any combination and variant. Whether you choose to prepare couscous in the form of pasta or small varnish, I suggest you try this combination. It is ideal for the whole family.

Method of preparation:

Then add the tomato juice, coconut sugar, oregano and a glass of water, then let it boil until the sauce decreases and the chicken is done. I added another glass of water and left it on the fire for about 45 minutes until the chicken was done.
Separately boil the couscous in water with a little olive oil until done (the berries are soft). This time I chose cous cous in the form of pasta but you can also use small cous cous.
Over the chicken with tomato sauce, add the prepared couscous and mix for a few more minutes on the fire until smooth.
At the end add parsley leaves, fresh basil, salt and pepper to taste.

Wash the chicken breast or thighs well, cut them into smaller pieces and put them in the fridge, after which we cut the vegetables. I cut most of them with the wavy knife blade, which gave the vegetables a wonderful shape, before and after cooking. We peel all the vegetables that need to be peeled, except for pumpkins and peppers, after which we wash them in several waters. Then we cut them: we cut the potatoes, carrots and zucchini with the corrugated knife, and we cut the other vegetables into larger pieces. Cut the onion into 4 or 6 (depending on its size), and leave the garlic cloves whole. Put all the chopped vegetables and chicken in a larger bowl and mix with all the above ingredients. Heat the grill pan and add the chicken breast and vegetables. Let it brown, but from time to time we turn it in the pan with a spatula, but easily so as not to destroy the vegetables. We do not do this operation too often so that the vegetables remain whole. At first, the fire should be hot, and after it has started to brown, we put it on a lower heat. The cooking time is from 50-60 min. After it is well browned, take it out on a plate and serve it hot next to a garnish.
