cucumber, peeled and diced
cup sour cream or plain Greek yogurt
small shallot (or 2 cloves garlic), peeled and chopped
lemon, zested and juiced
teaspoon cayenne pepper
green onions, very finely sliced
tablespoons chopped fresh flat-leaf parsley
tablespoons minced fresh dill
Fresh ground black pepper, to taste
In a blender, combine cucumber, sour cream, mayonnaise, buttermilk, shallot, lemon juice and zest, honey, salt and cayenne. Puree until smooth.
Add onions, parsley, dill and pepper and blend again until herbs are finely chopped and well mixed into the dressing. Yields about 1 1/2 cups.
- For a thicker, more dip-like consistency, scoop the center seeds from the cucumber before blending.
